Well, it took me long enough to get this posted!!! Last week and this week's mega sale gave us lots of super cheap canned tomatoes, so let's add some soups and chilis into our upcoming meal plans over the next few weeks! Here are a few to get you thinking...they are even GOOD for you as they both came from Weight Watchers 15 Minute Cookbook!
Tomato-Basil Soup
Yield: 4 servings
Ingredients:
1 cup chopped onions
2 (28 oz) cans diced tomatoes (Hunts $0.49 ea / mega sale price, -$1/3 (SS 1/23) = $0.16ea)
2 cups chicken broth
1/2 cup chopped basil
1/4 cup sour cream
Directions:
1. Heat a large saucepan over medium-high heat; coat pan with cooking spray. Add onion; saute 3 minutes or until browned. Stir in tomatoes, broth, and basil. Bring to a boil; cover, reduce heat to medium, and simmer 10 minutes.
2. Place 3 cups soup in a blender; process until smooth. Return pureed soup to pan; stir well. Ladle soup Into individual bowls; top each with sour cream.

Chili con Carne
Yield: 5 servings
Ingredients:
1 pound ground beef
1 1/2 cups water
2 teaspoons chipotle chili powder
1 (10 oz) package frozen chopped onion, celery, and bell pepper blend
1 (16 oz) can chili beans, undrained (Hormel $0.79 ea / mega sale price, -$1/3 Feb. All You = $0.46ea)
1 (14.5 oz) can diced tomatoes, undrained (Hunts $0.49 ea / mega sale price, -$1/3 (SS 1/23) = $0.16ea)
Shredded cheddar cheese (optional)
chopped green onions (optional)
Directions:
1. Heat a large saucepan over medium-high heat; coat pan with cooking spray. Add beef; cook 4 minutes or until meat is browned, stirring to crumble.
2. Add water, chili powder, frozen vegetable blend, chili beans, and tomatoes to pan; bring to a boil. Reduce heat, and simmer, uncovered, 10 minutes, stirring occasionally.
3. Ladle chili into individual bowls. Top each with shredded cheese or green onions, if desired.

Also, since there was such a great deal on Hormel canned chili (see above), you can always think about just heating up a few cans and serving it over hot baked potatoes and adding cheese and sour cream!
